| 2 tbLight olive oil |
| 1 bnWatercress |
| 1 smRed pepper; diced |

| Lollo biondo lettuce leaves |
| FOR THE PLATTER |
| 1 tbWhite wine vinegar |
| 4 Salad onions; finely chopped |
| Salt |
| ; (12oz) |
| 375 gSmoked mackerel fillet; |
| FOR THE DRESSING |
Sundried Fish Platter Preparation
Arrange the smoked mackerel and grapefruit on a bed of lollo biondo and watercress. Sprinkle over the salad onions and pepper. Blend the dressing ingredients together and spoon over just before serving. NOTES : A delicious light supper or suitable for parties.
