Original recipe makes 4 servings
1 dsOr two of Paprika
1 pkTaco Seasoning Mix
1 lbLean ground beef
1 cSour cream
1/2 cOnion; finely chopped
2 tbFresh Parsley or Cilantro;
1 cnCream of mushroom soup
1 pkBurrito-size Tortillas
2 cCheddar Cheese; shredded

Suzis Smothered Burritos Preparation

Pre-heat oven to 325-F degrees and prepare a 1 1/2-quart casserole dish. Brown the ground beef with the taco seasoning mix as directed on the manufacturers package. Add the chopped onion to the seasoned beef mixture and saute until the onions are transparent. In a separate mixing bowl, blend together the cream of mushroom soup and sour cream. Fill each tortilla with the beef mixture and top with grated cheese. Roll up the tortilla, tuck the corners, and place it in the baking dish. Smother the filled tortillas with the mushroom soup sauce and sprinkle the top with paprika and chopped parsley or cilantro. Serve warm from the oven with refried beans for a complete meal.
