Makes about 2 1/2 Dozen Muffins Pre-heat oven to 375-F degrees and lightly oil full-size muffin tins with non-stick cooking spray. In a large mixing bowl, combine the flour, sugar, cinnamon, baking soda, and salt. In a separate mixing bowl, combine the strawberries, vegetable oil, and eggs. Stir the wet mixture into the dry ingredients. Gently fold the chopped nuts into the batter. Fill the prepared muffin tins three-quarters full and bake for 15 to 18 minutes, or until the muffins test done in the center. Remove the muffins from the tins after cooling for a few minutes, and repeat the process until all the muffin batter is used. Store in an airtight container. juliakohler 1 year agoWonderful recipe! To make it less fat and cholesterol I used egg whites and olive oil. Loved the cinnamon and strawberries together.

cynlor 2 years agolike the previous reviewer, i used chic chips instead of nuts as a kid pleaser. they turned out well, and helped me effectively use up the strawberries before they spoilt!
Deasaugen 2 years agoThese were yummo! I changed it up a bit and added 1 more tsp of cinnamon, and instead of walnuts I added chocolate chips..so good!
Karma1969 2 years agoThis was a great recipe. I was a little scared by how much batter it made, but once they came out of the oven and cooled they didn't last long. I am putting this one in my keep pile.
Cookingjen75 4 years agoYummy way to use up strawberries Wasn't sure of measurements as am from Scotland where we use grams but guessed the cups and they turned out really well! Delicious!
