| 20 ozTuna; Ahi or Albacore |
| 1/2 cGround cashew nuts |
| 1/2 cMustard seed |
| 1 cWatercress; blanched, |
| Coriander; thyme, cumin, |
| 1/4 cFlour |
| Salt; to taste |
| Black Pepper; freshly ground |
| Rosemary; curry, paprika, |
| Celery seed; ginger, chili |
| 2 Eggs; beaten |
| 1/2 cOlive oil; for frying |
| Dry mustard; salt and pepper |
Spiced Cashew And Mustard Seed Crusted Tuna with Watercress Preparation
On plate, combine seasoning mix with flour and roll the tuna pieces in it. After rolling in mixture, dip into beaten eggs and then roll into cashew and mustard seed mix. Pan fry in hot olive oil until golden in color. Set aside. In same pan, discard excess oil and add shallots. Cook until transparent. Add heavy cream and cook until reduced to desired consistency, about 6 minutes. Finish with lime juice, chopped watercress and salt and pepper. Serve tuna on top of sauce.
