Original recipe makes 4 servings
6 Cloves
90 mlBrandy
1 1/2 tsFresh mint leaves; chopped
500 mlPineapple juice
12 1/2 Cm cinnamon; broken into
225 mlWater
6 Green cardamoms; bruised

Spicy Pineapple Punch Preparation

PUT the water, half the pineapple juice, cinnamon, cloves, cardamom and mint into a saucepan. Bring to the boil, cover the pan and simmer gently for 20 minutes. Remove from the heat and allow to cool. Keep the pan covered. Strain the drink and add the remaining pineapple juice and the brandy. Mix well. NOTES : A lovely drink to welcome your guests, serve it warm before lunch, especially at Christmas time, or enjoy it chilled with the barbecue during the long, warm summer evenings.
