Black Pepper; freshly ground
1 tbGinger juice
2 mdCarrots; shredded
1 tbRice vinegar
Salt; to taste
1 1/2 lbNapa cabbage; cut thin, (abt 9 cups)
3 tbVegetable oil
1/2 lbSnow peas; trimmed, and strings discarded

Snow Pea And Napa Cabbage Slaw Preparation

In a large saucepan of boiling water blanch snow peas 15 seconds and transfer with a slotted spoon to a bowl of ice and cold water to stop cooking. Drain snow peas well and slice thin diagonally. In large bowl toss snow peas with remaining ingredients and salt and pepper to taste. This recipe yields 6 servings.
