Original recipe makes 4 servings
1 tsolive oil
Boston Lettuce Leaves;
1/3 cRed wine vinegar
2 cTomato; Seeded And Diced
1 lbMedium Shrimp; Cooked And
1 cUncooked Orzo
1/2 tsDried Oregano
1/4 tsPepper
1/2 cPurple Onions; Finely
1/2 tsSalt
1/4 cChopped fresh parsley
1 tsDried basil
1 cFrozen Green Peas; Thawed

Shrimp And Orzo Salad Preparation

Combine first 6 ingredients in a large bowl. Stir well; set aside. Cook orzo according to package directions, omitting salt and fat. Drain well. Add orzo and remaining ingredients to vinegar mixture, and toss well. Cover and chill. Serve in a lettuce lined bowl, if desired.
