1/2 tsPepper
1/2 qtDemi glaze
1 Sprig fresh thyme
1 cRed wine; (Merlot)
Variety of wild mushrooms -
1 tsMinced fresh garlic
1 Shallot; minced
2 Bay Leaves
2 cBeef and mushroom stock

Sauce Bordelaise (Yield- 1 Pint) Preparation

Combine the shallots, thyme, pepper and red wine; reduce by 1/2. Add remaining ingredients. Bring to a boil. Thicken with corn starch and water to preferred consistency and let simmer for 3-4 minutes.
