Original recipe makes 4 servings
2 cCooked white rice
1/2 cFresh Cilantro; chopped
1 cnSpam luncheon meat; (12 oz)
1 tbVegetable oil
Warm tortillas
2 cShredded Monterey jack
1 lgOnion; chopped
1/2 cWhipping cream

Pueblo Spam Preparation

In a medium bowl, combine rice and cilantro; set aside. In a large skillet over medium-high heat, cook Spam and onion 7 to 10 minutes or until lightly browned. Meanwhile, in 2-quart saucepan over low heat, combine cheese, cream and oil. Cook, stirring occasionally, until cheese is melted. Place rice in center of plate; drizzle with cheese sauce. Place Spam mixture around the rice. Serve with warm tortillas. This recipe yields 4 servings.
