1/4 colive oil; Plus 2 tablespoons
1 mdOnion; minced
2 Chorizo sausages; removed from their casings and diced
5 mdBaking potatoes; peeled and cut into 1-inch chunks
1 tsHot paprika
1 1/2 tsSalt
6 cWater

Potato And Chorizo Stew, Rioja-Style Preparation

In a stockpot or other large pot, heat the oil over medium heat. Add the onion and cook for about 5 minutes, until it is softened. Add the sausages and cook, stirring for about 1 minute, or just until the meat begins to brown. Add the potatoes, paprika, and salt, and stir well. Add the water, increase the heat and bring the contents to a boil. (Add a little more water, at least enough to cover the potatoes by 1-inch, if you prefer the stew more soupy.) Reduce the heat to medium-low, cover the pot, and simmer gently for about 30 minutes, until the potatoes are tender. Ladle the stew into shallow bowls and serve.

thi is a fantastic sop. I have also made it with garbanzo beans instead of or with the potatoes

This was super easy to make, only takes an hour to make, and is inexpensive. What more could you want?

I was worried that the ingredients list might have some omitted ingredients but it does not. I searched some other recipes for this online and there are only the 6 ingredients.

I only used 4 cups of water.
