| 12 ozParmesan cheese; * grated, (tablespoons for topping) |
| 1/4 cParsley; chopped |
| zest and juice of 1 lemon |
| 1 lgOnion; thinly sliced |
| 8 ozSharp cheddar cheese; grated |
| 2 14-oz cansArtichoke heart; quarters |
| 1 1/2 cMayonnaise |
| 2 lbOregon Dungeness Crab Meat |
| 1 4-oz jarred pimentos; diced |
Oregon Dungeness Crab Au Gratin Preparation
*Asiago cheese may be substituted Preheat oven to 400 degrees. Thoroughly drain crab meat, artichokes and pimientos. Combine and mix all ingredients. Place mixture in ovenproof serving dish. Sprinkle reserved 3 tablespoons cheese to coat the top. Bake in center of oven for 20 to 25 minutes or until top is slightly browned. Makes 12 to 16 servings as an appetizer; 6 to 8 as an entree.
