150 gSalmon fillet
Knob of butter
Oil for deep-frying

Pan-Fried Salmon with Deep-Fried Rocket Preparation

1 Heat the oil for deep-frying. Season the salmon fillet. Heat a frying pan, melt the butter and add the oil. 2 Fry the salmon for two minutes on each side or until just cooked through. Deep-fry the rocket for 1-2 minutes until crisp. 3 Drain well on kitchen paper. Serve the salmon on a bed of the rocket.
