"My family and I loved this meal! They loved the dish and I loved an easy, new way to make pork chops. I made it a little different from the recipe after reading the reviews. Since I cook for a family of five, I made it with 1 1/2 cups of rice and then used 3 cups of chicken broth with a splash of white wine. I also seasoned the pork chops with salt and garlic powder before browning them. Overall great recipe and I will be making it on a regular basis" - Rmaciaswilson1

4 mediumPork Chops
6 tablespoonsRaw rice
1 14.5-oz canchicken broth
1 mediumOnion; sliced
2 mediumTomatoes; sliced
1/2 Green pepper; cut in rings
salt and pepper; to taste

Old Faithful (Pork Chops) Preparation

Pre-heat oven to 350-F degrees and lightly grease a covered casserole dish in which the pork chops will fit well; set aside. Brown both sides of the pork chops in a skillet over medium-high heat. Place the raw rice on the bottom of a lightly greased casserole dish. Place the browned pork chops on top of the raw rice. Top the pork chops with slices of onion, tomato, and green pepper. Season to taste with salt and pepper, then pour the chicken broth over the contents of the casserole dish.

Cover and bake for 1 hour, and serve warm.

    I made this yesterday and it was excellent. As he ate hubby kept repeating 'I love the rice.' The pork chops were a little over done so I'll shorten the cooking time next time I make it,which I'm sure will be very soon.

    I made this using a frozen vegetable mix of red peppers, onion, broccoli, and mushroom because the grocer's peppers were awful last week. I used fresh tomatoes on top of the canned ones. I used a short grained rice and doubled the rice amount and liquid. The flavor and texture of the rice was amazing. I will definitely make this again, and hopefully with the called-for ingredients. Even with the veggie shortcut, I would and will make it again. Thanks!

    Eh...rice came out mushy and overall very bland. Think measurements in recipe were off - only 6 tbsp rice to a whole can of broth? I thought it sounded strange but followed anyway. Next time will use more rice, season chops well before browning, and add some different colored peppers vs tomato.

    I didn't follow the recipe exactly; I used what I had on hand and it turned out great! My whole family loved it including my three little ones! The pork was so tender and moist; but most importantly the rice was cooked perfectly!! I was scared and crossed my fingers as I put it in the oven; boy was I pleasantly surprised! I used 1 box uncle ben's rice (mushroom mix), water amount as dirceted on box and added the seasoning mix along with a packet of onion soup mix to the water. I layered the rice, seared chops, then a bag of frozen mixed veggies, poured the seasoned water over the top and baked @ 400 for 1 hour. This will be on the menu rotation from now on!
