Original recipe makes 1 servings
2 tbVegetable oil
5 Cm cinnamon stick
1 lgOnion; finely chopped
2 Bay Leaves
325 gBasmati rice; washed and
4 Cardamoms
1 tsSalt
825 mlWater
170 gMushrooms; sliced

Mushroom Pilau From John Peel Preparation

1. Heat the oil in a large saucepan over a medium high heat. Add the bay leaves, cinnamon and cardamoms and let them sizzle for a few seconds. 2. Add the onion and fry until soft. Add the mushrooms and fry for about 5 minutes. 3. Add the rice and salt and stir fry for 2-3 minutes. Add the water and bring to the boil. Cover tightly, reduce heat to very low and cook or about 20 minutes until all the water has been absorbed. Fluff up the pilau with a fork and then serve.
