Wild Rice Pilaf
Original recipe makes 8 Servings
| 1 tsSeasoned salt |
| 1 cChopped red onion |
| & diced |
| thinly sliced |
| 1 dsCinnamon, nutmeg |
| 2 tbMargarine |
| 1/2 cFinely diced celery |
| 2 mdTart apples, peeled & cored |
| 1/4 cCurrants |
| 2 Scallions, green parts only |
| 1/2 cPecans |
| 2/3 cWild rice, rinsed |
| 2/3 cBrown rice, rinsed |
| Black pepper to taste |
| 2 tbFreshly minced parsley |
| 1/3 cOrange juice |
| 3 3/4 cWater |
Wild Rice Pilaf Preparation
Stir rices into boiling water & add salt. Simmer covered for 40 minutes. Heat margarine in a large skillet & saute onions & celery till golden. Ad apple & saute for 5 minutes. Stir in cooked rices with juice, scallions, currants & spices. Season to taste with pepper. Saute mixture for 5 minutes, stirring. Just before serving, heat through, add more liquid if necessary & stir in parsley & nuts.
