MANGO & CORN SALSA
1 tbFresh Parsley; Minced
1/4 cCilantro; Minced
2 tbFresh Lemon Juice
1/2 tsMarjoran
1/4 tsSage
1 PinchSugar
MARINADE
1/2 Green Pepper; Thinly Sliced
1/2 tsThyme
1 lgMangos; (Or 2 Sm), Peeled
1 lg CloveGarlic; Crushed
1 tbHot Red Pepper Sauce
4 Salmon Steaks
2 Plum Tomatoes; Finely Chopped
1/8 tsPepper
1/2 Red Pepper; Thinly Sliced
Salt and pepper to taste
3/4 tsSalt
6 EarsCorn
1/2 cDry vermouth
1 Jalapeno Chili Pepper

Marinated Salmon with Mango And Corn Salsa Preparation

Marinate steaks for 3 hours. Broil 7 minutes on each side. Baste frequently. Mango & Corn Salsa: Husk corn, baste with 2 tbsp olive oil, salt, & pepper. Grill or broil 4 inches from heat till golden (about 10 minutes). Roast jalapeno pepper till skin is charred. Peel...take out seeds & chop pepper. Put kernels in bowl , add roasted pepper & stir in all ingredients. Let sit for a few hours if possible. NOTES : Elizabeth Vargas.
