1. Make three slits on each side of the trout and place on a grill pan. 2. Mix together the butter, lemon rind, lemon juice, parsley and seasoning. Dot half over the trout. Place under a preheated moderate grill for 12-15 minutes, turning the trout once and dotting with the remaining butter during cooking. 3. Sprinkle the almonds over the trout and return to the grill for 1-2 minutes until browned. Serve immediately garnished with parsley sprigs and lemon wedges. NOTES : Quick and easy to make, frozen trout can also be used (making sure they are thoroughly defrosted)
