Original recipe makes 1 servings
4 1/2 ozAduki beans; cooked
1 1 in piece lemon grass
Groundnut oil for frying
1 Red chilies; (1 to 2)
6 Kaffir lime leaves
1 1 in piece root ginger;
4 1/2 ozBlack eyed beans; cooked

Kaffir Lime Leaf, Black Eye And Aduki Bean Croquettes Preparation

1. In a food processor combine all the ingredients and blend until a rich paste has developed. 2. Form small medallions from the paste. 3. Heat the oil in a large frying pan and shallow fry the croquettes for 3-4 minutes. NOTES : I bought these delicious croquetres while shopping down one of the busy streets in Chiang Mai. I have adapted the recipe to create a more interesting balance of flavours.
