Hot-Pepper Sweet Potatoes
Original recipe makes 2 servings
| 1/2 cFat-free; low-salt chicken |
| 2 tsolive oil |
| Black Pepper; freshly ground |
| Cut in 1" cubes |
| Salt |
| Several drops hot pepper |
| Broth |
| 2 mdGarlic; minced |
| 3/4 lbSweet potatoes; peeled, and |
Hot-Pepper Sweet Potatoes Preparation
Heat a nonstick skillet large enough to hold potatoes in 1 layer over medium heat. Mix oil, broth and garlic; add to skillet. Add potatoes, making sure they are in 1 layer. Cover; simmer 15 minutes. Sprinkle with pepper sauce and salt and pepper. Yield: 2 servings.
