1 tbOrange Peel; Grated
1 cBrown sugar
1 pnGround cinnamon
1 pnGround allspice
3 cBread crumbs; coarse, fresh
1 pnGround nutmeg
5 tbButter; melted
5 cTart cooking apples; peeled

Hudson Valley Apple Brown Betty Preparation

Tart apples such as Spys, Baldwins, Winesaps or Granny Smith. Toss apples with spices. Drizzle melted butter over bread cubes and toss until butter is absorbed evenly. Spread bread in bottom of 1/2 qt. souffle dish, cover with apples. Sprinkle with orange peel and brown sugar. Repeat layers until dish is full. Finish with a layer of bread, dot with butter pieces and sprinkle with sugar. Bake in preheated 375 oven for 30-40 minutes until golden. Serve hot with cream or hard sauce.
