| Rustic bread; for serving |

Insalata Caprese Preparation
Slice the mozzarella into 5mm. thick slices and slice the tomatoes in the same way. Tear the basil leaves in half or quarters if the leaves are large. Arrange overlapping slices of mozzarella and tomato on a platter and tuck some basil leaves in between the layers. Drizzle with olive oil and a little balsamic vinegar. Add salt and pepper to taste and serve with thick sliced rustic bread, toasted if you wish.
