| 2 lgUnpeeled bananas; cut in | |
| 1 tsGround cinnamon | |
| 1/2 tsGround ginger | |
| 1 tbUnsalted butter | |
| 1 tsVegetable oil | |
| 1/4 cDark rum | |
| Splash Grand Marnier | |
| Orange zest; for garnish | |
| 1/4 cBrown sugar |
Grilled Banana Compote Preparation
Rub the cold grill rack with oil, and light coals or start grill. Brush bananas with vegetable oil and grill for 2 to 3 minutes. Remove from the grill, peel, and cut into medium-size pieces. In a medium-size saute pan, heat butter until bubbling. Add brown sugar and bring to a boil. Add banana pieces and rum. Splash with Grand Marnier. Boil for about 1 minute. Add cinnamon and ginger; remove from heat. Serve warm over ice cream, garnished with orange zest. Serves four.
