|1/2 tsBlack Pepper; freshly ground|
|2 tbFresh lime juice|
|1/4 tsSalt; Divided|
|Vegetable cooking spray|
|1/2 tsGrated Orange Rind|
|1/4 cFresh Basil; Thinly Sliced|
|2 Garlic; minced|
|1 Cu Red Bell Pepper; Coarsely|
|1 1/2 cNectarines; Coarsely Chopped|
|2 tbMinced Jalapeno Pepper|
|1 Cu Red Onion; Coarsely|
|4 Salmon Fillets|
Grilled Salmon with Nectarine-Red Onion Relish Preparation
Combine first 11 ingredients and 1/8 teaspoon salt in a medium bowl, and stir well. Let nectarine mixture stand 2 hours. Sprinkle pepper and 1/8 teaspoon salt over salmon fillets. Prepare grill. Place fillets on grill rack coated with cooking spray, and grill 5 minutes on each side or until fish flakes easily when tested with fork. Serve immediately with nectarine-red onion relish.
