4 plantains; Ripe
Oil for frying
Salt
Black Pepper; freshly ground

Emerils Fried Plantains Preparation

Preheat the fryer. Peel the plantains and slice thinly on the bias. Fry in batches until golden brown, about 2 minutes, stirring occasionally. Remove from the oil and drain on paper towels.
