1 tbmilk, nonfat
2 shakescayenne
2 tbCalvados (apple brandy); or white wine
1/2 ccottage cheese, non-fat
8 ozFresh lump crabmeat
1/4 ccream cheese, non-fat
1 tsFresh lemon juice; up to 2
2 tbOnion; finely chopped
1 tbHorseradish
2 tbCelery; finely chopped
1 tbDijon mustard
2 tbParsely; chopped

Great Low-Fat Party Dips- Hot Maryland Crab Dip Preparation

1. Preheat oven to 350 degrees. 2. If the crabmeat is frozen, drain it well in a sieve, pushing the solids with paper towel to remove all the moisture. Fresh or frozen, pick over it to remove any bits of cartilage and set aside. In a food processor, puree cottage cheese, cream cheese, horseradish, mustard, milk, lemon juice and Calvados 3 to 4 minutes. 3. In a small bowl, combine the cottage cheese mixture (which should be very smooth), the crabmeat, onion and celery and stir until well blended. Spoon the mixture into an ovenproof dish and bake for 25 to 30 minutes, until bubbly and lightly golden on top. Sprinkle with cayenne or paprika and parsely, for garnish. Serve hot with crisp bread. Variation: When thinned with 1/4 cup nonfat milk, this dip becomes enough sauce for 4 servings of pasta. Notes: Believe it or not there is such a thing as a healthy indulgence! Followed recipe measurements exactly as it sounded very flavorful for a healthy crab dip version, but totally not impressed -- very bland except for too strong a dijon flavor. If you are making this, halve the dijon so it's not all you taste (even overpowered the horseradish), and then serve with garlic toast or very flavorful cracker as this was very dull on multigrain, even with the cayenne sprinkled on top. Actually threw it all away as no one liked the texture, didn't touch it after the first taste.
