1 Cucumber; peeled, seeded
1/2 tsSalt
2 tbfresh oregano; Chopped
1/4 cExtra-Virgin Olive Oil
1/4 tsBlack pepper
1/2 ckalamata; Halved pitted
1/2 cred peppers; Chopped roasted
1/2 cred onion; Tiny-diced
125 gfeta cheese; (4 oz), crumbled
1/4 cfresh Italian parsley; Chopped
1 tbDijon mustard
2 tbRed wine vinegar
1 smGreen pepper; diced
900 gred potatoes; Peeled

Greek Potato Salad with Feta Vinaigrette Preparation

Steam potatoes until very tender, 12 to 14 minutes. Meanwhile, in large bowl, make dressing by whisking together vinegar, olive oil, mustard, oregano, salt and pepper. When potatoes are still warm, toss them with dressing and set aside until cool Stir in olives, cucumber, red and green peppers, onion, cheese and parsley.
