1/4 cfresh parsley; Minced
1/2 lbFeta cheese; crumbled
1/3 colive oil
1/2 tspepper; Cracked
1/4 cFresh Lemon Juice
18 ozRadishes; trimmed and cut into bite-size
1 tbPrepared mustard
6 ozolives; drained, Pitted ripe

Greek Radish Salad Preparation

In a medium bowl, use a wire whisk to mix well the olive oil, lemon juice, mustard, sugar and pepper. Add radishes, cheese, olives and parsley. Toss gently with a rubber spatula, mixing well. Cover and refrigerate at least 1 hour to blend flavors.
