Original recipe makes 1
1 lg headred leaf lettuce; torn into pieces
6 tbolive oil
1/2 Cucumber; peeled, seeded, coarsely chopped
; pieces
3 lgPlum tomatoes; seeded and chopped
1 tbGarlic; chopped
; chopped
2 tbFresh Lemon Juice
3/4 cfeta cheese; Crumbled
1 tsRed wine vinegar
1/2 cblack olives; Pitted, (brine-cured) coarsely chopped

Garlicky Greek Salad Preparation

Whisk first 4 ingredients in small bowl until blended. Season to taste with salt and pepper. (Can be prepared 3 hours ahead. Let stand at room temperature. Rewhisk before using.) Combine lettuce, tomatoes, cucumber and olives in bowl. Toss with dressing. Sprinkle cheese over and serve. Serves 6. Bon Appetit October 1994
