In a large saucepan mix in the olive oil, garlic, sliced mushrooms, herbs, mussels, clams, langoustines, cockles, winkles, white wine, crab and fish stock and cover and simmer for 10 minutes. Add the saffron, lobster and more olive oil, stock, white wine and seasoning, again cover and simmer for 10 minutes. Serve on a bed of pasta and top with chargrilled scallops.
