Original recipe makes 4 servings
1/2 cChiffonade of mint
Juice of three oranges
2 cTomato juice
1/4 cBrunoise celery
2 cWatermelon juice
1/2 cBrunoise papaya
1/2 cBrunoise peaches
1/2 cBruonise cantaloupe
1 cDitalini pasta; cooked al
Honey to sweeten
1/2 cBrunoise mangos
Juice of two lemons
1/2 cBrunoise melon
2 ozPineapple juice
1/4 cBrunoise carrots; blanched
1/2 cBrunoise pineapple

Fruit Minestrone Preparation

In a mixing bowl, whisk the tomato juice, watermelon juice, pineapple juice, lemon juice and orange juice together. Sweeten the liquid with honey. Chill the liquid for 2 hours. In a mixing bowl, toss the remaining ingredients together. Ladle the liquid into a shallow bowl. Garnish the soup with the fruit mixture. This recipe yields 4 servings.
