Fruit Minestrone
Ingredients
| 1/2 cChiffonade of mint |
| Juice of three oranges |
| 2 cTomato juice |
| 1/4 cBrunoise celery |
| 2 cWatermelon juice |
| 1/2 cBrunoise papaya |
| 1/2 cBrunoise peaches |
| 1/2 cBruonise cantaloupe |
| 1 cDitalini pasta; cooked al |
| Honey to sweeten |
| 1/2 cBrunoise mangos |
| Juice of two lemons |
| 1/2 cBrunoise melon |
| 2 ozPineapple juice |
| 1/4 cBrunoise carrots; blanched |
| 1/2 cBrunoise pineapple |
Fruit Minestrone Preparation
In a mixing bowl, whisk the tomato juice, watermelon juice, pineapple juice, lemon juice and orange juice together. Sweeten the liquid with honey. Chill the liquid for 2 hours. In a mixing bowl, toss the remaining ingredients together. Ladle the liquid into a shallow bowl. Garnish the soup with the fruit mixture. This recipe yields 4 servings.
