3 lgNavel oranges; (perfect)
9 Wine grapes
2 Scallions; sliced Paper thin
1 mdRed onion
Black Pepper; freshly ground
6 tbExtra-Virgin Olive Oil
Salt; to taste
3 tbRed wine vinegar
2 tbalmonds; Blanched sliced
1/2 tsSugar

Ensalada De Naranjas Y Cebollas - (Orange And Onion Salad) Preparation

Remove peel and pith from oranges and slice into 1/8-inch slices and lay on platter. Slice red onion paper thin and lay rings over oranges. Sprinkle almonds over oranges. In a small bowl, whisk together sugar, vinegar and oil to emulsify, and pour over salad. Sprinkle with wine grapes and scallions and season lightly with salt and pepper. This recipe yields 4 servings.
