3 tbTarragon Vinegar
1 bnBasil; chopped
4 Garlic; chopped
1 Lemon; juice of
4 tbolive oil
1 Bay leaf
1 smChilli
1 tsSugar
1 tsCoriander seeds; crushed
100 gFresh tomatoes; seeded
80 gShallots; chopped
500 gButton mushrooms; trimmed

Field Mushrooms for Aperitif Preparation

Heat some oil in a pan. Add the shallots and cook for a few minutes then add the garlic, tomatoes, lemon juice, vinegar, chilli, sugar, coriander and the bay leaf. Simmer for about 10 minutes. Chop the mushrooms into 4 pieces and put them into a very hot frying pan with oil. Stir fry the mushrooms and season the with pepper. Add the mushrooms to the sauce, stir and add some olive oil (this helps to marinade the mushrooms). Chop basil finely and add to the mushrooms. Stir and add salt and pepper to taste.
