Original recipe makes 12
2 cWhole wheat flour
1 1/4 cWater
1/2 cApplesauce
2 tbSugar; (may use 1/4 cup for Sweeter muffins)
1/4 tsSalt; (or less)
1 tsCinnamon
1 lgApple; or 2 small apples, Chopped (about 1 1/2 cups)
3 tsBaking Powder

Whole Wheat Apple Muffins Preparation

Combine dry ingredients in large mixing bowl. Combine water and applesauce in another bowl. Add apple to dry ingredients and mix to coat apple. Add water mixture to dry ingredients. Mixture will be somewhat thick. Spoon mixture into non-stick muffin tins sprayed with vegetable oil spray. Bake at 425 deg. F. for about 20 minutes or until lightly browned. Remove from muffin tin. You can replace the cinnamon and apple with 1 1/2 cups blueberries for blueberry muffins. Posted by Terry Frye

These were bland and spongey (not moist). They are edible but probably only as a filler rather than 'a real muffin' replacement. I wouldn't bother with them again
