"These Devil’s Food Cupcakes were delicious...dark, rich and chocolatey! For the frosting (pictured), we used the simple Chocolate Ganache Frosting associated with this recipe on the Martha Stewart web site. It uses 8 ounces chopped semi-sweet chocolate and 1 cup heavy cream. They are melted together in a heavy saucepan over low heat and cooked until smooth and glossy. The mixture is then refrigerated until cool, beat with a hand mixer until thick and creamy, and finally slathered onto the cupcakes. When frosted, the cupcakes looked and tasted completely decadent." - sgrishka

3 ouncesUnsweetened Chocolate; chopped
1 teaspoonBaking soda
1/2 cupBoiling water
1 cupUnsalted butter; room temperature (2 sticks)
2 cupsSugar
5 largeEggs
3 cupsAll-purpose flour; sifted
3/4 cupButtermilk
1 teaspoonPure vanilla extract

Devils Food Cupcakes Preparation

Heat the oven to 350 degrees. Line two 12-cup muffin tins with paper.

Melt the chocolate in a double boiler over simmering water. In a bowl, stir the baking soda into 1/2 cup boiling water; stir this mixture into the chocolate. Set this aside to cool slightly.

Using an electric mixer, cream the butter and sugar until the mixture is light and pale yellow in color. Add the eggs, one at a time, and continue to mix until thoroughly incorporated. Alternatively, add the flour and buttermilk in small amounts, and blend well. Add the melted chocolate and the vanilla into the batter, and stir well.

Pour the batter in the paper cups and bake for 30 minutes or until a cake tester comes out clean when inserted into the center of a cupcake. Remove cupcakes from the oven and allow them to cool briefly in the muffin tin before transferring them to a wire rack to cool completely. Ice, and serve.

Makes 24 cupcakes.

    I liked it, although it could be more chocolat-y. They were really light and fluffy but also moist!! Family ate it up for my kids birthday. I will definitely make it again but I will add more chocolate! Maybe some semi-sweet chips or just another ounce of chocolate.
