| 3 tbSalad oil |
| 2 tbHoney |
| 1 cmilk |
| 1/2 tsDry tarragon leaves |
| 1/4 cOnion; minced |
| 2 tsBaking Powder |
| 1 1/2 cWhole-wheat flour |
| 3/4 cCheddar Cheese; grated |
| 1/2 cgreen bell pepper; Diced |
| 1/2 cYellow cornmeal |
| 2 lgEggs |
| 1/2 tsDry thyme leaves |
| 1/2 tsSalt; optional |
Whole-Grain Herb-Cheese Muffins Preparation
Preheat oven to 375F, prepare pans. In a frying pan cook onion & pepper in 1 Tbsp of the oil until limp, about 7 mins, stirring often. Mix remaining oil, honey, mustard, milk, eggs & cheese. In another bowl, stir together flour, cornmeal, b/pdr, herbs & salt. Add the dry mix to the wet mix with the onion mixture, stir until just combined.
