"This is a very nice moist bread. After adding the eggs and before adding the last of the flour I added 1/2 c sunflower seeds, 1/2 c cracked wheat (bulgur), 2 1/2 tbsp seasame seeds, 2 tbsp poppy seeds, 2 tbsp 7 grain cereal, 2 tbsp steel cut rolled oats, and 2 tbsp flax seed. Ive had great success making a whole wheat bread based on a recipe from "Whole Foods for the Whole Family." Heres how I make it. Dissolve yeast in warm water with 1 t. honey. After it bubbles up, add remaining honey, salt, oil, and 3 c. of flour. Beat by hand 200 strokes (this strengthens the gluten and makes the bread rise more easily). Add 1 more cup of flour and beat briefly. Now you have the "sponge." Cover bowl and let sponge rise for about an hour until doubled in bulk(I put the bowl on an old heating pad set on low, and this works great). Add eggs and remaining flour until a soft dough results. Knead for about 10-15 minutes. Place dough in greased bowl, cover, and let rise until doubled in bulk. Punch down the dough, shape into two loaves, and put in two loaf pans. Let rise until doubled, then bake in 350 degree oven for 35 minutes. If you try this, let me know how it works. maanyaraju 2 years agoI'm pretty much a novice at baking bread and I tried two other highly rated recipes in the past but none of them had as good an outcome as this recipe had. The bread was perfectly soft and light, not at all dense like my previous attempts. The flavor was really good too. I used molasses instead of honey. This is now my go-to recipe.

Jakandjillsmom 3 years agoThe salt in this recipe must be wrong. It should be 2 tsp. Because 2 T. is way too much.
Furrypharm 3 years agoGood basic recipe. Varied by adding fennel seed to mix and topped with black pepper and salt. Great with some room temp butter.
AnOlive 3 years agoA keeper! Good everyday bread for toast & sandwiches. I tinkered a little bit: as suggested by an earlier reviewer, I added sunflower seeds, flax meal and sesame seeds (1/4 cup each, but next time I'll try upping the quantities). I also used 1 cup of unbleached AP flour.
