2 cYellow corn meal
3 tbSugar
1/2 Butter
1/2 tsBaking soda
1/2 tsSalt
1 1/4 cButtermilk
1/2 cFlour
2 tsBaking Powder
2 slBacon
4 Eggs

Crusty Skillet Corn Bread Preparation

Mix all dry ingredients together. Stir eggs into buttermilk and add to dry mixture. Melt butter inside heavy iron skillet. Coat skillet with butter on all sides. Pour remaining butter from skillet into cornbread batter and mix thoroughly. Pour the cornbread batter into hot skillet and bake in a 375 degree oven. Cook bread until it has a golden brown crust (approximately 25-30 minutes). Yield: 8 servings. I substituted bacon fat for butter. Nice flavor and texture. I doubled the sugar and will add more next time I make it, as I like a mild sweetness in my corn bread.

I fried bacon and left drippings in cast iron pan for a good coating. That's what makes this have a yummy crispy edge. I also added 1/2 cup of sweet potato pie filling to take it over the TOP!!!!!!!

Recipe was incomplete, I guessed at the butter (1/2 cup) & diced up the 2 slices of bacon, added to dry ingredients. I also added 1 cup of shredded cheese & 1 chopped jalapeno. Delicious

I've made this a couple of times and it is VERY nice and crusty. I also added old cheddar, real corn and some chipotle powder for a nice kick.

Good - but two problems. First, didn't know how much butter was required. Second, didn't know what to do with the bacon. Outcome good, though.

You've got the secret to good crust. Putting it in a hot pan makes all the difference. Great picture also.
