2 Eggs
1 tbCooking oil
1 pkFrozen whole-kernel corn -
1 cnSpam luncheon meat - (7 oz);
Shortening
1/4 tsSalt
1 tsBaking Powder
1/4 cmilk
1 cFlour

Corn Fritters Preparation

Stir together flour, baking powder, and salt until well mixed; reserve. In medium bowl, beat eggs with milk until frothy; stir in oil. Add flour mixture; stir just until flour is moistened. Gently mix in Spam and corn. Drop batter by heaping tablespoonfuls into shortening heated to 375 degrees. Fry until browned, turning as needed. Drain on paper towels. Serve with warm maple or buttered pancake syrup. This recipe yields ?? servings.
