1/2 tsGarlic powder
2 cSoy sauce
1/2 tsOnion powder
1 cWater
1/2 tsPepper
1 cDry white wine
1/4 cNon-iodized salt
1/2 tsTabasco sauce

"Little Chief" Smoked Salmon Deluxe Preparation

Mix thoroughly. Brine salmon chunks 8 or more hours, keeping refrigerated. Rinse thoroughly after brining. Pat dry with a paper towell and allow to air dry for at least one hour prior to smoking.
