20 ozCoconut milk
4 ozcoconut; Finely shredded
1/2 cSugar

Coconut Sorbet Preparation

Combine the ingredients in a heavy saucepan and place over medium heat. Bring to a simmer and cook until coconut is soft and tender, about 30 minutes. Cool the mixture to room temperature, cover and chill in the refrigerator until cold. Place the mixture in an ice cream or sorbet maker and freeze as directed. (You can freeze the mixture in a bowl or container directly in the freezer. When completely frozen, scrape the mixture to form servings...the flavor will be the same, but the consistency will be different!) Makes about 3 cups of sorbet.

I substituted lime peel for the shredded coconut. Overall an easy recipe (and would be great to serve to vegan friends instead of ice cream) but if I made this again I would blend the coconut milk first. Even though I shook the can there were tiny waxy or fatty clumps in my ice cream which were not very appetizing.
