| 1/3 colive oil |
| 1/4 tsSalt |
| 2 tbRed wine vinegar |
| 1/2 English cucumber; seeded and chopped |
| 1/4 tsPepper |
| 1 clGarlic; minced |
| 2 tbChopped fresh parsley |
| 2 tbLemon juice |
| 2 tbfresh chives; Chopped |
| 1 Carrot; peeled and grated |
| 1 tbfresh dill; Chopped |
| 1 Sweet red pepper; or yellow |
| 1 sm bunchbroccoli |
Chopped Bistro Salad with Herb Dressing Preparation
1. Break broccoli florets into small pieces. Peel stems and cut into small pieces. 2. In a large bowl, combine broccoli, sweet pepper, carrot, cucumber and celery. 3. In a small bowl, combine garlic, parsley, chives, dill, lemon juice, vinegar, olive oil, salt and pepper. Whisk to combine well. 4. Pour dressing over salad ingredients. Toss well and serve.
