| Fresh coriander |
| 1/2 tsCayenne |
| 4 tsChopped fresh ginger |
| 5 flChicken Stock |
| 1 lgPinch of ground cinnamon |
| 1/2 tsFenugreek |
| 1 tbGarlic; chopped |
| 3/4 ptHeavy Cream |
| 3 ozCreamed coconut |
| 1 lgPinch of ground nutmeg |
| 2 lbChicken; cut into 1" squares |
| 1 tsCardamonn |
| 2 tbVegetable oil |
| 1/2 tsMustard seed |
| 1/2 tsCoriander |
| 6 ozOnions; chopped |
Chicken Corma Preparation
Dry roast and then grind cumin, mustard seeds, fenugreek, coriander seeds. Mix with cardammon, cayenne, cinnamon, all-spice, nutmeg. Brown chicken in a little oil. Add onion, garlic and ginger. Add spices. Cook for a few mins. Add stock, cream and then coconut. Simmer for 15-20 mins. Recipe by: Late Lunch
