Original recipe makes 6
1 kilogramChicken boned; chopped
8 tablespoonButter
8 tablespoonFlour
2 cupOnion; chopped
1 cupCelery; chopped
1 cupGreen pepper; chopped
1 tablespoonGarlic; chopped
1 tablespoonThyme
1/2 teaspoonBasil
3 eachBay leaf
1 canTomato sauce
23 fluid ozChicken Stock
1 tablespoonBrown sugar
4 slicesLemon
2 tablespoonCajun spice mix
Parsley; chopped
1 cupGreen onion; chopped
Rice; cooked

Chicken Creole Preparation

Saute the chicken in butter for 2-3 minutes. Add the flour and stir over a medium heat until lightly brown.

Saute onions, celery, green pepper and garlic until they begin to turn transparent. Add the stock, tomato sauce, thyme, basil, bay leaves, brown sugar, lemon slices and cajun spice blend. Simmer for about 15 minutes.

Add green onions, parsley and chicken during the last 5 minutes of cooking.

Serve over rice.

Quick and easy to make, after reading the last comment I added only 1 bay leaf. Will deffinately make again.

This dish was very good except that the bay leaves were a bit overpowering. I would reccomend using one or two instead of three. Other than that, every one enjoyed it.

Served with yogurt baked courgettes and rice. I have seen a receipe using 1/2 teaspoon of paprika and two slices of diced smoked bacon, I will try this variation.
