| 8 tablespoonButter |
| 8 tablespoonFlour |
| 2 cupOnion; chopped |
| 1 cupCelery; chopped |
| 1 cupGreen pepper; chopped |
| 1 tablespoonGarlic; chopped |
| 1 tablespoonThyme |
| 1/2 teaspoonBasil |
| 3 eachBay leaf |
| 1 canTomato sauce |
| 23 fluid ozChicken Stock |
| 1 tablespoonBrown sugar |
| 4 slicesLemon |
| 2 tablespoonCajun spice mix |
| Parsley; chopped |
| 1 cupGreen onion; chopped |
| Rice; cooked |
Chicken Creole Preparation
Saute the chicken in butter for 2-3 minutes. Add the flour and stir over a medium heat until lightly brown.
Saute onions, celery, green pepper and garlic until they begin to turn transparent. Add the stock, tomato sauce, thyme, basil, bay leaves, brown sugar, lemon slices and cajun spice blend. Simmer for about 15 minutes.
Add green onions, parsley and chicken during the last 5 minutes of cooking.
Serve over rice.
