It was very simple to make, the chicken was tender and juicy, the sauce was a wonderful accent to the chicken and all the flavors were perfectly balanced. (Amazing how so few ingredients create so much flavor!) The dish makes a great, quick weeknight dinner but is elegant enough to serve for guests. Original recipe makes 2 Servings
2 Skinless boneless chicken breasts
2 tablespoonsUnsalted butter
1 tablespoonVegatable oil
2 tablespoonsDry white wine
1 tablespoonFresh Lemon Juice
1 tablespoonCapers; drained (bottled)
3 tablespoonsFresh parsley; chopped
2/3 cupChicken Stock
4 tablespoonFlour

Chicken Piccata with Capers Preparation

Halve the chicken pieces horizontally with a sharp knife and flatten them slightly between sheets of plastic wrap. Dredge lightly in flour, shake off the excess and put on rack to dry.

In a large heavy skillet heat 1 tablespoon of the butter and the oil over moderately high heat until the foam subsides and in the fat saute the chicken pieces, seasoned with salt and pepper, for 1 minute on each side, or until they are cooked through. Transfer a 350 degree oven to keep warm, covered loosely.

Pour off the fat in the skillet, to the skillet add the remaining 1 tablespoon butter, the wine, the chicken stock and the lemon juice, and bring the mixture to a boil. Stir in the capers, the parsley, and salt and pepper to taste and spoon the sauce over the chicken.

    I really enjoyed this. It was my first time making and trying it. I made it exactly as written. I served it with with penne pasta in a creamy lemon sauce that I also found here and Caesar asparagus which is cooked tossed with butter, lemon, and Parmesan cheese. I think it went very well with this dish

    I tried to make this exactly per the recipe but 1 minute per side was nowhere near enough so I kept cooking several minutes more until done. The sauce is kind of thin. We really like the lemon and caper flavor but are looking for ways to thicken and punch it up a little. Will try some of the suggestions in the reviews.

    This was really yummy. I mixed the lemons with Meyer lemons and it was very good. I served along side lemon and asparagus risotto. It was delicious.

    Great recipe. Very similar to the sauce I've had many times in Italy. I used a little corn starch to thicken it, though, for a more authentic Italian flavor. Such a simple yet pleasing dish. My family loved it, and I'll be serving it again.
