1 tsGround cinnamon
1 cVanilla Yogurt; Nonfat
4 cSliced Apples; Peeled
1 1/2 tsVanilla extract
Mascarpone Cheese; Optional
1/4 cBrown sugar; packed
1/2 tsGround nutmeg
3 tbRaisins
3/4 cCinnamon Graham Cracker
2/3 cApple juice
1/2 tsGround Allspice; Divided
1/4 tsRum extract
3 ozMascarpone Cheese

Cheesy Apple Pie in a Glass Preparation

Combine first 6 ingredients and 1/4 teaspoon allspice in a medium saucepan. Cook 20 minutes over medium low heat until apples are tender and mixture is slightly thick. Remvoe apple mixture from heat; cool. Stir in 1/4 teaspoon allspice, vanilla, rum extract, and mascarpone. Sppon 1/4 cup apple mixture into each of 4 parfait glasses; sprinkle each with 1 1/2 tablesoons crumbs. top each with 1/4 cup yogurt, 1/4 cup apple mixture, and 1 1/2 tablespoons crumbs.
