|2 Belgium endives; cut into pieces|
|1/4 cFlat-leaf parsley leaves|
|1 Headromaine lettuce; torn into bite-sized pieces|
|1/2 cCorn kernels|
|1/2 cwalnuts; Chopped, or pecans|
|1/2 cGarbanzo beans; chopped|
|1 tbFresh Lemon Juice|
|1 cCherry tomatoes; (red & quartered)|
|3 tbExtra-Virgin Olive Oil|
|1 Cucumber; peeled & diced|
|Salt & pepper; to taste|
|1 tbRaspberry vinegar|
Chef Jamies Chopped Salad Preparation
In a large salad bowl, combine the lettuce, endive, cucumber, tomatoes, garbanzo beans, corn, parsley and walnuts or pecans. In a small mixing bowl, whisk together the vinegar and lemon juice. Slowly whisk in the oil, until well combined. Season the dressing with salt and pepper. Pour the dressing over the salad. Toss well. Serves 4.
