Original recipe makes 1
1/2 cgreen onion; Minced
1/2 tsSalt
1/2 cFresh lime juice
2 lbFresh shrimp; shelled &
1/4 tsCayenne pepper
2/3 ccream of coconut
1 tbCurry powder

Caribbean Coconut Shrimp Preparation

Combine first 6 ingredients and mix well. Place shrimp on skewers. Brush sauce on shrimp while grilling until done, about 3 minutes per side. Serve with remaining sauce. Yield: 4 to 6 servings. Chicken can be substituted for shrimp.
