Original recipe makes 1
1 mdGarlic
5 Scotch bonnets
1/2 cWater
1 in pieceginger root
1 mdYellow onion; coarsely chopped
1 tsSalt
1 pnCoriander
1 pnCumin
1/2 tsTurmeric
1 tbDry mustard
1/2 tbHoney
1 Mango; or papaya
1/2 cCider vinegar

West Indian Pepper Sauce Preparation

Puree first 10 ingredients in blender. Transfer mixture to bowl. In non reactive saucepan, bring vinegar, water, and salt to boil. Pour over mango mixture and stir well. Allow to cool before bottling. Refrigerated, sauce will keep approx 6 weeks.
