1/3 cGarlic; crushed
5 Jalapenos; split and seeded
1 tbDried thyme
1 tbDried basil
3 Bay Leaves
1 tbDried Oregano
1 gaCold water
1/4 cWhole black peppercorns
3/4 cBrown sugar
3 Lemons; cut in half
1 cKosher salt

Brine for Roasted Chicken Preparation

Place all ingredients together in container big enough to hold whole chicken and mix well. Rinse whole roasting chicken, be sure to remove giblets and any loose parts from cavity.
