1 cmillet; Uncooked
2 cVegetable broth
Salt
Black Pepper; ground

Basic Millet Preparation

Place millet in a large, heavy pot. Stirring frequently, toast over medium heat until golden. Add broth and salt and pepper to taste. Bring to a boil, cover and reduce to a simmer. Cook about 20 minutes, until the liquid is absorbed. Remove from heat and let sit, covered, for 10 minutes. Fluff with a fork; adjust seasonings. Yield: 6 servings.
